I think they're quite often fried in olive oil. Some are first parboiled and then fried or roasted in the oven -- lots of salt. My favorite is when the potatoes are soft inside and crisp outside. Those pictured were perfect. But the sauce is really important. This one was a slightly spicy tomato aioli (exceptional). There are lots of variations but I think the sauce is supposed to have at least some kick to it. I've seen and had Patatas Bravas served with not much more than ketchup or ketchup with mayonnaise. Definitely not the same thing! And, I can't believe I was able to answer this cooking question!!!Moving with Mitchellhttps://www.blogger.com/profile/12954028272162285597noreply@blogger.comtag:blogger.com,1999:blog-2367834014770669778.post-89541701005910626032017-01-11T22:29:06.952+01:002017-01-11T22:29:06.952+01:00that's a J? nope, looks like a P to me. but ...that's a J? nope, looks like a P to me. but the food looks yummy!anne marie in phillyhttps://www.blogger.com/profile/11765140782182605141noreply@blogger.comtag:blogger.com,1999:blog-2367834014770669778.post-40784197154407362472017-01-11T22:22:23.454+01:002017-01-11T22:22:23.454+01:00By the looks of that delicious looking food, Mitch...By the looks of that delicious looking food, Mitch, I can only imagine how it made you feel!!
